Some years ago, people kept asking us
-where can you get a decent Paella??

....well the answer was that with one or two exceptions you couldn´t.
The reason seemed to be that to do it properly establishments would have to charge too much!!
So we set about finding how to make a good Paella, never mind the cost!!

How is it prepared?

You will need Onions & Garlic, Chicken Stock with a touch of Chilli, Saffron soaked in hot milk and left for about three hours, Pork & Chicken Pieces, Good Rice (we use Basmati), Mussels & Clams -left in salt water overnight, fed with Bran or Flour-, Fresh Squid cut into rings, Chopped Veg e.g. Toms, Peppers etc and finally some good sized uncooked Prawns.

In a good Paellaera with Extra Virgin Olive Oil fry the onions and garlic like this...

Meanwhile de-beard the mussels and steam in wine & some of the chicken stock. Notice how feeding them gives them a good colour as well as getting rid of the grit. Set aside making sure you mix the mussel stock into the chicken stock ...That´s where the real flavour comes from!

When the Onions & Garlic are just starting to brown, add the pork pieces........

Add the Rice and Chicken and constantly stir fry for five minutes.

Add the Saffron to the Chicken Stock, mix well and pour into the Pan Stirring well.......

Now add the Veg and Calamares (Squid). Chopped fresh flat Parsley won´t go amiss at this point! Stir it well to distribute the Rice and let it gurgle on a low heat.

When the mixture starts to firm scatter the Clams over the top, pressing them slightly down into the liquid, but not under it.....

Now lay the raw Prawns neatly around like this............... Make sure they are totally defrosted!

Now its sit and wait time! The prawns will gradually steam red. We sometimes put a large saucepan lid over to speed this up a bit. Whatever it will take about 1/2 hour to cook the prawns.....

When they look about right place the steamed mussels uniformly around the Paella, ensuring that any that didn´t completely open are discarded.











The Paella pan is very hot by this time so decorate with couple of serviettes. When you are really happy that all is well ...........

Notice we haven´t included amounts etc. Well that´s because we want you to have it here with us -Its only €19,50 a portion!! The one pictured was cooked for Three People.
